Mexico Lindo will soon open for business on Roswell Road in Sandy Springs to serve a blend of Tex-Mex favorites alongside more authentic Mexican dishes.
“Our award-winning fajita nachos have been a fan favorite since day one and continue to be one of the top dishes on the menu. We’re also known for serving the best margaritas in town,” said Mexico Lindo’s Maria Cardona.
The restaurant takes over the former Tijuana Joe’s location. Cardona said being close to Sandy Springs’ downtown and in the growing community makes it convenient for residents and a strategic move for the business. Mexico Lindo, which should open in early December, will build on the former restaurant’s 23-year legacy in Sandy Springs.
Cardona said the city’s growing food scene and a strong sense of community make it an ideal place to introduce Mexico Lindo’s take on Mexican and Tex-Mex dishes.

“At Mexico Lindo, we want our customers to know that we are more than just a restaurant—we are a family-owned business with a deep passion for sharing the flavors and traditions of Mexican cuisine,” Cardona said.
Mexico Lindo’s story began in the summer of 1984 when members of the Echeverry family migrated from Columbia to Atlanta. The first Mexico Lindo restaurant opened in Smyrna. Cardona said within a few years, another location opened in Cobb County.
The restaurant is still owned and operated by the family. Oscar Lopez leads Mexico Lindo with more than 20 years of experience. He works with his son, Oscar J. Lopez, who has been in restaurants for 15 years. Cardona, Oscar J.’s cousin, contributes her 18 years of restaurant experience to Mexico Lindo since she arrived in the United States.
Cardona said Mexico Lindo’s Sandy Springs location is a large restaurant. Once it’s operational, she expects it will create a significant number of jobs from kitchen staff to servers to management.
Mexico Lindo’s birria and al pastor tacos are incredibly popular, as is the Mexican-style paella, Cardona said. The Sandy Springs location will also feature monthly specials showcasing seasonal ingredients and creative twists on classic dishes.
Another location of Mexico Lindo resides in Mableton on Veterans Memorial Highway.
